Watermelon Feta Salad
During the summer, we try to spend a lot of time on our deck and like to grill as much as possible. It’s so easy, mess free and I always think the end result is so flavorful. Most of the time, I’m guilty of throwing on a protein with oil and seasonings and conjure up some easy sides to go along with it. One of my favorite sides for summer is a Watermelon Feta salad – it’s light and healthy, refreshing and delicious!
Ingredients:
- 2 cups of watermelon
- ½ cup of feta cheese
- Juice from 1 lime
- 2 tablespoons olive oil
- Freshly ground sea salt and pepper to taste
To change things up, I sometimes incorporate cucumber or red onion – just depends on the crowd and the other sides or veggies I’m making!
- Chop up and de-seed watermelon; set aside
- In a separate bowl, mix together oil, lime, salt and pepper
- Spread over watermelon and add cheese, toss gently
- Sprinkle mint on top add extra lime on side if needed

This is my go-to cutting board for all my fruit and veggie chopping (you’re supposed to use a plastic one to cut meat for germ purposes). I love the dark, rich wood and often use it as a buffet dish or a cheese plate. So durable and versatile!
